Spring and Easter always lighten my mood. The days are longer, and people are out and enjoying the sunshine whenever possible.

 Berry-licious Easter Squares

It is a time of renewal and lighter living.  I have found this recipe online and there are so many delicious variations to it.  

In this version I use the tartness of raspberries, but you can always switch it up with strawberries, blueberries or even a mix of fruits you have or try a version using dried cranberries.    It is a healthy variation which is gluten free, low cholesterol, sweetened with honey and using fresh or frozen fruit that you many have on hand. Ingredients To Make the Fruit Filling.  

  • 3 cups fruit of choice (raspberries flash frozen from last summers bounty were used in this version)
  • 3 tbsp of honey, or Aguava syrup, or maple syrup
  •  Place your berries and sweetener of choice in a saucepan over medium heat and bring to boil, stirring to ensure the syrup does not burn. 
  • Lower the heat to simmer and cook for 20 more minutes to thicken.   You can add a mixture of 2 tbsp cornstarch mixed with 2 tsp water and added to your fruit mix in order to thicken it quicker.  Let it cool.
